One of the sample wedding menus that Blue Mesa offers is the “Blue Mesa Celebration” with the choice of either two entrees for $26 per person or three entrees for $29 per person. This would also include a selection of two appetizers and a salad. The entrée options are extensive and impressive, and your guests would be satisfied with any of the delicious options. For example, the Southwest Chicken Piccata with Lime Butter Sauce and Black Bean-Corn-Avocado Salsa, the Bacon Wrapped BBQ Chicken with Stuffed Roasted Peppers, or the BBQ Brisket Rajas Enchiladas topped with Queso and Corn Salsa, would all be incredible selections for your guests. Among other entrée selections, Blue Mesa offers premium entrees for an additional two dollars each. The Beef Tenderloin with Red Bordelaise Sauce, Red Chile or Grilled Salmon, and the Grilled Rojo Shrimp Skewers are some of the premium entrees that would also make a great carving station, which is sliced on site with cocktail rolls and sauces. The Street Taco Party is designed for guests to build their own street tacos by choosing from a selection of three different meats and adding toppings such as smoky black beans, coconut lime rice, sweet corn cake, guacamole, and choice of salad.
