Asian Pear Margarita
In a shaker tin add
- 1.5 oz. Cabo Wabo Blanco Tequila
- 1.5 oz. pear puree (we recommend Perfect Puree but you can use any brand)
- 0.5 oz. lemon juice
- tiny pinch of nutmeg
Add ice and shake vigorously. Strain into a 9 oz. highball glass with fresh ice.
Note: If you care to make your own puree (as we do at the restaurants), follow these steps (and omit using nutmeg twice). However, you will have close to 3 cups of puree (which you can refrigerate for future use):
Juice 2 cups of Asian pears (put in the blender, then micro strain), add 1/4 cup honey, 1/3 cup sugar, a pinch of grated nutmeg and one rosemary sprig. Bring to a boil and let simmer for 5 minutes. Store refrigerated.
Garnish drink with a thin slice of Asian pear and a rosemary sprig.
