Apricot Hatch Margarita

Roast a whole Hatch chile, let it cool, and slice in half-inch wide rings. Muddle 3 of the rings and set aside.

In a shaker tin add:

  • the muddled roasted Hatch chile
  • 1.5 oz. Blue Nectar Silver Tequila
  • 2 teaspoons apricot preserves
  • 2 oz. fresh lime juice
  • 0.5 oz. agave nectar
  • 2 dashes of Fee Brothers Plum Bitters

Add ice and shake vigorously. Strain into a 17 oz. stemless wine glass with fresh ice.  Garnish with 2 of the remaining roasted Hatch chile rings.

*If Hatch chiles are not available, substitute Poblanos.
